The Role Dim Sum Head Chef

Lead the dim sum kitchen with full responsibility for quality, consistency, and execution
Design, develop, and refine dim sum menus that balance authenticity with innovation
Ensure traditional techniques are executed to the highest standard across all service periods
Train, mentor, and develop the dim sum team, creating a culture of discipline and pride
Maintain exceptional food hygiene, organisation, and stock control
Work closely with senior kitchen leadership to align with the wider culinary vision

About You

Proven experience as a Dim Sum Head Chef or Senior Dim Sum Chef in a high-end or high-volume restaurant
Expert knowledge of classic and modern dim sum techniques, doughs, fillings, and presentation
Strong leadership skills with the ability to train and retain talented chefs
Calm, organised, and detail-focused, even during peak service
Passionate about product quality, consistency, and continuous improvement
